Recipe below and in my Substack at Lenorenolanryan ✨ 1 store-bought angel food cake Whipped Cream 8 oz mascarpone cheese 1 cup heavy cream 3/4 cup powdered sugar 1 tsp vanilla extract 4 cups ripe mangoes, sliced 2 cups ripe strawberries, sliced 2 tbsp lemon juice Maple Syrup mixed with vanilla and butter Garnish Fresh mint or basil Slice the angel food cake into three layers. Macerate the mangoes and strawberries with ½ cup powdered sugar and lemon juice. In a cold bowl, whip the mascarpone, cream, ¼ cup powdered sugar, and vanilla until soft peaks form. Mix ¼ cup lemon juice, 2 tablespoons powdered sugar, and 1 teaspoon vanilla together. To assemble, brush the syrup on the bottom layer. Dollop and spread whipped cream over the top. Top the cream with fruit. Repeat one layer. Place the top of the cake and spread the remaining whipped cream. Garnish with more cream, fruit, and a mint sprig.
