The protein thing drives me nuts, because not one of them ever has a warning on the label regarding people with kidney issues. If you have certain problems with your kidneys, you should not be eating too much protein.

Vodka acts as an emulsifier, it is also used because tomato has flavour compounds that are only soluble in alcohol, so while it doesn’t add flavour, it acts as a catalyst to unlock flavour

In agreement on *almost* all of this but voddy pasta has my heart 😩 I do find a difference when cooking it without vodka. It gives a lovely acidity like adding vinegar. Nice to balance out the creaminess
