Maggie Bailey, known as the “Queen of the Mountain Bootleggers,” started bending the law, making moonshine at 17 years old to support her family. She became a Kentucky legend. Today I'm making a bacon-washed whiskey sour in her honor. Bacon-Washed Whiskey Sour Bacon-washed bourbon • 10 oz bourbon • 3 oz bacon fat Add to a jar, swirl gently (don’t shake). Let it sit for 6–12 hours, then freeze until the fat solidifies. Strain through a coffee filter. Cocktail • 2 oz bacon-washed bourbon • 1/2 oz orange juice • 1/2 oz lemon juice • 2 tsp maple syrup (or more to taste) • 1–2 dashes aromatic bitters • 1 egg white Dry shake (no ice) until foamy, then shake with ice. Strain and garnish with candied bacon. It's smoky, it's tangy, & it's just a little rebellious, in the best way.
