Rice paper cheeseburger - genius or chaos? Team Genius drop a 🍔 below 😃 Ingredients: 500g beef mince 8 sheets of rice paper (round, approx. 22cm) 8 slices of cheese (I used American and cheddar) ½ cup finely diced white onion 100g sliced pickles (optional) 2 tsp white sesame seeds Burger sauce (I used a store-bought version) 2 eggs, whisked (for brushing) vegetable oil, for shallow frying sea salt freshly ground pepper 1 Cook the Smash Patties I used a 10cm diameter, 6cm deep ramekin for this recipe. Divide the beef mince and loosely roll it into balls. Squish each ball into a ramekin lined with cling film to form the exact shape of the patty that you need. Season each patty generously with salt and pepper. Drizzle the patties with a little oil and cook them in a hot pan until a dark, crusty sear forms on the bottom, then flip and cook the other side. Remove the patties from the pan and let them rest on a plate for a minute to cool slightly. 2 Prep the Cheese Cut your cheese slices into 8cm rounds so they fit perfectly inside the rice paper parcels. 3 Prep the Rice Paper (The Ramekin Hack) Lightly oil the inside of your ramekin before starting. Fill a large shallow bowl or dish with warm water. Take two sheets of rice paper and dip them together into the water. Crucial step: Squish the two pressed-together sheets into the oiled ramekin before they get really soft. They will feel too firm initially, but they will soften as you press them into the ramekin. If you wait until the wrappers are already soft, they will be too sticky to get in. 4 Assemble the Layers Layer the ingredients inside the rice paper-lined ramekin in this order: 1 slice of cheese (cut into an 8cm round) Cooked burger patty Diced white onion Sliced pickles 2nd slice of cheese (cut into an 8cm round) Carefully pull the overhanging sides of the rice paper over the filling to seal the parcel tightly. Try to keep the folds as flat and even as possible. 5 The Sesame “Bun” Carefully remove the sealed parcel from the ramekin. Brush the smooth top of the rice paper parcel with the beaten egg and sprinkle generously with white sesame seeds so they stick to the surface, mimicking a burger bun. Repeat the assembly process for the remaining burgers. 6 Fry to Perfection Wipe out your frying pan and place it over medium-high heat. Add enough vegetable oil to generously coat the bottom of the pan. Once the oil is hot and shimmering, carefully place the parcels into the pan, sesame-side down first. Cook in the oil for 4 minutes on the sesame side. Then, carefully flip and cook for 3-4 minutes on the bottom. Finally, use tongs to hold the burger and sear the sides for a few seconds as well or until the entire parcel is golden, blistered and shatteringly crisp. 7 Serve Transfer the crispy burgers to a wire rack or paper towel to drain for a moment. Slice in half and serve immediately with burger sauce for dipping, while the cheese is gooey and the rice paper is at its crunchiest.
