What if it is sticky from start to finish? Sticky during stretch and folds, sticky when trying to shape then flat and gummy when baking.

Mine grows in the fridge but as soon as I take it out and start scoring it then it starts to go flat. Doesn’t hold the shape. But does rise when baking. What am I doing wrong.

So I’ve been having a lot of issues with how long it’s taking for my starter to reach peak and then for my dough to bulk ferment. I’ve tried different hydration and different amount of time on the counter. I also tried the microwave. I left my last loaf on the counter 12+ hours because she never got pillowy and never pulled from the sides. What do you think about warming mats?

You are my favorite SD creator but it seems like you don't respond to comments/questions ever or often. 😔 I hope I'm wrong. I proof on the counter and then put in the frig overnight. I thought dough doesn't rise in the frig? I think I always over proof my dough. I don't know how to time it right. So frustrating.

I push my fermentation because I like the texture. Mine rarely grow in the fridge but I leave them in about 36 hours. They do not collapse when I take them out. Sometimes it can be a starter issue.

Question!! I started a sourdough starter on August 25th and got a false rise on day 2 and since then absolutely nothing!! I cover it with the saran wrap covers with the elastic band and when I go to feed it there is an almost dried layer on the top and it’s still kinda thick!! Where am I messing up?

Do you always shape at 50%rise? Do you ever just throw it in the fridge shape the next morning then put back in fridge until you can bake. Time for me has been a thing.

Do you sell your loafs? And if you do what do you to bake a bigger batches? Although I would love to use a Dutch oven like yours multiple wouldn’t fit on my home oven.. and thank you for the tip! Im baking them in an oval roaster pan and they look really nice but not like this!
