Maple Syrup Cream Cheese Frosting Ingredients • 8 oz cream cheese, softened • ¼ cup maple syrup (adjust to taste) • ½ tsp vanilla extract Pumpkin loaf Ingredients • 1 ¾ cups einkorn flour • 1 tsp baking soda • ½ tsp baking powder • ½ tsp salt • 1 ½ tsp cinnamon • ½ tsp nutmeg • ¼ tsp cloves • 1 cup pumpkin puree (from fresh pumpkin) • ½ cup Greek yogurt • ½ cup olive oil • ¾ cup maple syrup • 2 large eggs • 1 tsp vanilla extract Instructions 1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper. 2. Prepare fresh pumpkin puree: Halve the pumpkin, remove seeds, and roast at 400°F (200°C) for about 40 minutes until soft. Scoop out the flesh and puree until smooth. 3. Combine dry ingredients in a bowl: einkorn flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. 4. In another bowl, whisk wet ingredients: pumpkin puree, Greek yogurt, olive oil, maple syrup, eggs, and vanilla extract. 5. Fold wet ingredients into dry ingredients until just combined. 6. Pour batter into the loaf pan and smooth the top. 7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. 8.
