🍪 One step many bakers rush? Creaming their butter and sugar! Properly creamed butter and sugar should look pale, fluffy, and noticeably increased in volume. The mixture should look lighter and creamier, with the sugar evenly incorporated. Here’s how I check: rub a little of the mixture between your fingers to assess the texture. It should feel creamy, although you may still notice some sugar crystals. Sugar doesn’t completely dissolve in butter, so don’t use the absence of graininess as your only test! Don’t rely on the clock. Use your senses! 👀✋ This small amount in my large mixing bowl took 8 minutes to cream properly. If I had doubled the quantity, it would have taken around 5 minutes. I also find that brown sugar generally takes longer to cream than granulated sugar. Why does this matter? Creaming incorporates tiny air pockets into the butter. Those air pockets contribute to the volume and texture of your baked goods. 👩🍳 PRO TIP: If your recipe relies on the creaming method for volume, butter temperature matters! Aim for 65–70°F. Butter that’s too warm can struggle to retain the tiny air bubbles you incorporate, while butter that’s too cold won’t cream efficiently. Remember, not every cookie recipe needs extensive creaming. Some recipes use melted butter or minimal aeration to create a denser, chewier cookie. The key is understanding what your particular recipe needs! Learn the WHY behind your baking, and you’ll bake with confidence! 🍪 #CookieBakingTips #BakingScience #CookieBaking #BakingTips #BakeWithConfidence
