I was the first person to use a new wood at one of these(can’t remember but it ended up black after stain) it was so tough to work with I ended up cutting one instead of shaving it. Workers let me make another one for free. I now have 3 chopsticks engraved Wabi-Sabi

Nice project. Purple Heart is food safe if kept oiled or waxed, so just remember to keep up the maintenance on them.
