Full Recipe↓ Day 61/100 | SALMON CHAZUKE 🛒 INGREDIENTS: Servings: 1 - Rice: 150g - Salmon: 1 fillet (80g) [Seasoning for salmon] - Salt: pinch - Soy sauce: 1/2 tbsp - Sesame oil: 1 tsp [Broth] - Water: 400ml - Ginger: 1 knob - Scallion (Green part): 1 - Salt: 1/4 tsp - Green tea: 1 tea bag [Topping] - Nori seaweed - Toasted sesame seeds - Chopped scallions 🧑‍🍳 METHOD: 1. Slice the unpeeled ginger. 2. Separate the scallion greens from the whites, then finely chop the white parts. 3. Season the salmon fillet with salt. 4. Pan-sear the salmon until golden brown on both sides and cooked through. 5. Peel off the crispy skin, leaving it in the pan, and transfer the cooked salmon to a tray or a plate. 6. Flake the salmon meat and toss with soy sauce and sesame oil. 7. Reheat the pan with the salmon skin over medium heat until crisp. Add water, the sliced ginger, scallion greens, and salt. 8. Cover with a lid and simmer on low heat for 10 minutes to extract the flavours. 9. Strain the broth into a jug or teapot and steep a green tea bag for 2-3 minutes. 10. Place warm rice in a bowl, arrange the flaked salmon, chopped scallion whites, toasted sesame seeds and nori over the top, then pour the hot tea broth around it to serve. 💡 KEY POINTS: - Chazuke (Ochazuke) is traditionally made with dashi broth (like kombu or katsuobushi). Since authentic Japanese dashi isn't always available in everyday European supermarkets, we're building our own umami base using what we have: crispy salmon skin, ginger, and scallion tops ⛩️ TRADITIONAL OPTION: - Instead of making broth from salmon skin, ginger, and scallion greens, use kombu dashi. ⚠️ DISCLAIMER: Not affiliated with or endorsed by TESCO. #ochazuke #JapaneseRecipes #JapaneseCooking #EasyRecipe #Tesco
