CRUNCHY CHICKEN CHEESE BUNS #cheese #food #recipe #chicken #buns DOUGH 200 ml lukewarm milk 15 g honey 8 g instant yeast 1 egg (medium) 25 g unsalted butter 415 g all-purpose flour 8 g salt (1⅓ tsp) CHICKEN FILLING 25 ml olive oil 375 g chicken thighs, diced 4 g chicken seasoning (salted) 3 g onion powder (1 tsp) 2 g turmeric (⅔ tsp) 2 g cayenne pepper (⅔ tsp) 3 g paprika powder (1 tsp) 2 g garlic powder (⅔ tsp) 70 g yellow onion (½ onion) 50 g red bell pepper (⅓ pepper) 35 g corn 5 g fresh parsley 15 g sweet soy sauce (ketjap manis) 30 g chili sauce 100 g grated cheese FILLING cream cheese cheese slices cheddar cheese COATING milk breadcrumbs INSTRUCTIONS Add the lukewarm milk, honey, and yeast to a large bowl. Mix well and let stand for 5 minutes. Add the beaten egg and mix well. Add the butter, flour, and salt, then knead for 10–12 minutes until smooth. Cover the dough and let it rise in a warm spot for 1 hour, or until doubled in size. Heat the olive oil in a frying pan over medium-high heat. Add the chicken thighs together with the chicken seasoning, onion powder, turmeric, cayenne pepper, paprika, and garlic powder. Cook for 6–7 minutes. Add the chopped onion, red bell pepper, corn, parsley, and sweet soy sauce. Cook for another 3–4 minutes. Add the chili sauce and grated cheese and mix until fully combined. Remove from the heat and let the chicken mixture cool completely. Deflate the dough and divide it into 12 equal portions (about 60 g each). Shape into balls. Roll each ball into a circle. Spread some cream cheese in the center, add a piece or slice of cheese and optional cheddar. Top with about 50 g of the chicken mixture. Seal the dough and press the seams firmly. Place milk in one bowl and breadcrumbs in another. Dip each bun first in the milk, then coat with panko. Place the buns on a baking tray lined with parchment paper and let rise for another 30 minutes, or until visibly doubled. Heat a layer of sunflower oil (about 2 cm deep) in a frying pan to 175°C (350°F). Fry the buns on both sides until golden brown and crispy. Drain on paper towels.
