Day 5/100: Dark Chocolate Walnut Banana Bread Moist. Sweet. Seriously satisfying, and made with ingredients that love your skin and gut back. Welcome to The Clear Skin Kitchen where I use my knowledge as The @acnenutritionist to translate nutrition science into delicious recipes that support clear skin from the inside out. Better ingredients. Same satisfaction. Happier skin. For the skin nutrition nerds, head to my Substack for all the deets on eating to clear your skin. But if you just want the recipe, here it is: WET INGREDIENTS 2.5 banana, ripened and peeled 3 eggs, organic, pasture-raised ¼ cup non-dairy milk 1 Tbsp. coconut oil (unrefined) melted 1 tsp. vanilla extract DRY INGREDIENTS 1 cup walnuts (ideally soaked in water overnight, drained) 1/3 cup dark chocolate chips or chopped chocolate 1 cup tigernut flour or almond flour ⅓ cup arrow root starch or tapioca starch 1 tsp. baking powder 1 tsp cinnamon or pumpkin pie spice (optional) ¼ tsp unrefined salt (real, pink, or Celtic salt) TOPPING ½ banana sliced Additional chocolate chips 1. Preheat oven to 350 degrees Fahrenheit. 2. If you have a bullet blender, blend the bananas in it until liquified, and pour into a large bowl. Otherwise, in a large bowl, mash banana well with a fork for a few minutes, until they turn into a smooth, lump-free liquid or soup-like texture. 3. Add the rest of the wet ingredients to the banana bowl and stir well until fully combined. 4. Chop the walnuts and add to the banana bowl with the chocolate chips. 5. In a separate small bowl, combine all remaining dry ingredients and mix well. Then, pour into the the wet ingredient bowl and mix well until fully combined. 6. Lightly grease a 9-inch loaf pan with coconut oil or line with parchment paper. Pour the batter into it. Optionally, add toppings: Lay sliced banana down the middle of the loaf, and sprinkle additional chocolate chips. 7. Bake for 40 minutes, or until top is golden brown, and a toothpick comes out clean. Remove from the oven and let cool before removing from pan.
