Heat a heavy skillet over medium-high heat for 4–5 minutes, then add a little oil. 3. Cook the steak to your preferred doneness: • Rare: 2–2½ minutes per side; remove at 120–125°F. • Medium-rare: 2½–3 minutes per side; remove at 128–130°F. • Medium: 3½–4 minutes per side; remove at 135–140°F. For a deeper crust, use a steak press for the first 30–60 seconds, then remove it. Sear the fatty edges for 30–45 seconds. 4. Reduce the heat to medium. Add the butter, garlic, and rosemary, then baste the steak for 60–90 seconds. 5. Transfer the steak to a board and let it rest for 8–10 minutes. 6.
