🍪 Bakery-Style Brownie Cookies 🍫 Rich, fudgy bakery-style brownie cookies with crisp edges, gooey chocolate centres and that irresistible shiny, crackly brownie top. 🤎 Makes 12 large cookies 📖Ingredients: Chocolate mixture * 227g semi-sweet chocolate (60–65% cocoa), finely chopped * 84g unsalted butter * 1 tbsp neutral oil * ½ tsp instant espresso powder Dry ingredients * 63g plain flour * 20g cocoa powder * ½ tsp baking powder * 1 tsp cornflour * ½ tsp fine sea salt Wet ingredients * 100g caster sugar * 50g dark brown sugar * 2 large eggs, room temperature * 1 egg yolk * 2 tsp vanilla extract Topping * Flaky sea salt 👩‍🍳 Method 1. Brown the butter: Melt butter over medium heat until golden and nutty, 3–5 minutes. 2. Melt: Remove from heat and stir in chocolate, oil and espresso powder until smooth. Cool for 5 minutes. 3. Dry ingredients: Whisk flour, cocoa, baking powder, cornflour and salt together. 4. Whip: Beat sugars, eggs, yolk and vanilla for 5–7 minutes, until pale, thick and fluffy. 5. Combine: Slowly mix in the chocolate mixture. 6. Fold: Gently fold in the dry ingredients until just combined. 7. Scoop: Immediately scoop into 12 cookies using a 2 tbsp scoop. 8. Bake: 350°F / 177°C for 10–11 minutes. Keep the centres slightly underbaked. 9.
