my way tastes great
1. score the membrane with sharp knife
2. season with rub no binder or pat dry
3. wrap in plastic wrap tight and let sit in fridge over night
4. smoke at 225° till around 170°. no timer just temp
5. wrap in tinfoil woth apple juice and brown sugar
6. cook at 225° meat side down till 200°
7. pull and let cool in tinfoil till 145°
8. place in fridge in tinfoil over night until ready to eat the next day
9. pull out of tinfoil and put on hot grill
10. brush on brownsugaer and tomato based homemade sauce.
11. let sauce setup, flip, and repeat till you get a glaze.
12. continue on hot grill and saucing till you get the char you want.
13. serve and enjoy
