Your average ticket is way off. Bakery/cafe with an $8 average is incorrect. It will mostly be in the $13-$15 area. On the weekends (Fri-Sun) it will be $18-$21. How did you get your numbers?

Wrong market. Our coffee shops with a drive through in TX do 1.5 to 2.5 million in a grocery anchored shopping center. Labor is low teens

I was a coffee consultant for 4 years in the city, helped open 15 different cafes and get them started with education/training/bakery and roasters. Most of them end up SQUASHED by rent and labor- and EQUIPMENT. Sales are all over the place, a place like stumptown in the west village has 1500 transactions a day. - the money is in building a Roastery.

As a smaller cafe owner I think the only number that felt off was the average ticket price. Most places should have at least a $10 avg ticket price on slow days & $15-$17 on weekends. Especially in nyc where a basic drink could easily be more than $7 itself. Love this series though!

I’m in food trucks, we’re up to 3 units now along with some wholesale into stadium/concession. We can hit about $250-$350k per unit. Not bad at all, and capEx is about $50k per unit. The downside is it comes with a lot of event commission splits and maintenance costs.

I’ve been seeing a lot of coffee shop owners speak out the numbers and many of them do well over $2 million per year. I think things are shifting and they’re finding creative ways to increase average ticket

Would love to see this about climbing gyms (some decent sized vc/pe transactions in recent years) or fitness centers more broadly. It’s a tricky equation to balance real estate/capacity economics with steady member growth/retention
