@yume.bakery: The coziest apple cinnamon cake for the first days of fall 🍎🍂 Save this one for your next cozy baking day! * 4 large eggs * 220 g sugar / 1 cup + 1 tbsp * 1 tsp vanilla extract * 180 ml neutral oil / ¾ cup * 200 g Greek yogurt or crème fraîche / ¾ cup + 1 tbsp * 300 g all-purpose flour / 2½ cups * 2 tsp baking powder * ½ tsp baking soda * ½ tsp salt * 100 ml milk / ⅓ cup + 1 tbsp 🍎 Cinnamon Apples * 4 medium apples, peeled and sliced * 50 g brown sugar / ¼ cup * 1½ tsp cinnamon * 1 tbsp all-purpose flour 🤎 Cinnamon Butter Swirl * 80 g melted butter / ⅓ cup * 90 g brown sugar / scant ½ cup * 2 tsp cinnamon * 1 tbsp all-purpose flour - Prepare the apples: Peel and slice the apples. Toss with brown sugar, cinnamon and flour. Set aside. - Make the batter: Beat eggs, sugar and vanilla for 2–3 minutes until light and fluffy. Add oil and yogurt and mix briefly. - Whisk together flour, baking powder, baking soda and salt. Add to the wet ingredients along with the milk. Mix just until combined. - Spread about ⅔ of the batter into a greased 35 × 23 cm pan. - Evenly layer the cinnamon apples on top, then spread the remaining batter over the apples. - Mix all cinnamon swirl ingredients together.
