Preheat oven to 375°F and bring a pot of water to a boil. 2. Add 3 small Yukon Gold Potatoes to boiling water and cook for 25 minutes. Remove, cut the potatoes in half and let sit to cool. 3. Pre-cook bacon until just crispy and cut into bits. 4. Lay out parchment paper onto baking tray. 5. Add a small amount of olive oil, then layer the mozzarella cheese, the bacon bits, red pepper chili flakes and place one half of a potato cut side down on top. 6. Carefully “smash” the potato with the bottom of a glass or utensil. 7. Add more red pepper chili flakes, olive oil, bacon bits, mozzarella and black pepper on top. 8. Into the oven until golden brown (note - keep close eye on this as cook time will vary greatly due to humidity, oven size, etc). 9. Remove from oven, garnish with sauce of your choice (I used ketchup) and parsley. 10. Enjoy
