Apple cider pot roast 🙂‍↕️ The combination of tender beef, creamy mashed potatoes, and rich apple cider sauce is simply perfect. This is exactly what we love about the colder months. Ingredients (6 servings): Beef chuck roast – 1.5 kg Olive oil – 2 tbsp Salt – 2 tsp Black pepper – 1 tsp Yellow onion – 1 large Celery – 2 stalks Garlic – 4 cloves Tomato paste – 2 tbsp French apple cider brut – 500 ml Beef broth – 500 ml Carrots – 3 Fresh thyme – 3 sprigs Fresh rosemary – 2 sprigs Bay leaves – 2 For serving: Mashed potatoes Fresh parsley, chopped Instructions: 1. Preheat the oven to 160°C (320°F). 2. Pat the beef dry and season generously with salt and black pepper. 3. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef for 4–5 minutes per side until deeply browned. Remove and set aside. 4. In the same pot, sauté the onion and celery for about 5 minutes. Add the garlic and tomato paste and cook for another 1–2 minutes. 5. Pour in the apple cider, scraping up all the browned bits from the bottom of the pot. Add the beef broth, thyme, rosemary, and bay leaves. 6. Return the beef to the pot. The liquid should cover about ⅔ of the meat. Cover with a lid and transfer to the oven for 3.5–4 hours, or until fork-tender. 7. Add the carrots during the last 50 minutes of cooking. 8. Remove the beef and vegetables from the pot. For a smoother, thicker sauce, strain the cooking liquid into a separate saucepan. Bring to a gentle simmer over medium heat and cook uncovered for about 15 minutes, until slightly reduced and more concentrated. Let it cool slightly before serving. 9. Shred the beef into large pieces and serve over creamy mashed potatoes with the carrots, apple cider sauce, and fresh chopped parsley. Enjoyy! #EasyRecipe #potroast #fallrecipes #DinnerIdeas
