Golden, crispy skulls with pepperoni and cheese brains! These look absolutely killer on the table and taste even better. I’ve included my secret parm herb dough recipe so you can really kill it! Chef Joe’s Skull Calzones Ingredients 1 ball pizza dough homemade (recipe below) or store bought if you don’t love your family 3 cups chopped pepperoni 1 cup shredded mozzarella 6 slices fresh whole milk mozzarella Olive oil for molds Preheat oven to 425. Oil skull molds well, getting into every crevice. Mix pepperoni and shredded mozzarella. Divide the dough into 3 oz pieces and roll each into an oval large enough to line the mold and wrap the filling. Spoon about 2 oz filling into the center and top with a slice of fresh mozzarella. Bring edges up and seal tightly. Place seam side up in the mold so the smooth dough presses into the skull face. Lightly brush the exposed dough with oil. Lay a piece of parchment directly over the mold, then place a sheet pan on top to gently press the backs flat while baking. Bake 25 minutes, removing the pan and parchment for the last 5 minutes to brown. Cool 5 minutes, carefully pop out, serve hot. Nordic Ware Haunted Skull pan available on Amazon. 72-Hour Dough with Parm & Herbs Ingredients: 4 cups (480 g) flour • 2 tsp salt • 1/4 cup (20 g) grated Parmigiano Reggiano • 1 tbsp dried Italian herbs • 1 3/4 cups (415 mL) warm water • 1 tbsp honey • 1 tsp instant yeast Whisk flour, salt, Parm, and      herbs. Mix warm water and honey.      Sprinkle yeast on top. Rest 5 minutes until foamy. Combine and knead 5–7 minutes      until smooth. Cover and rise 24 hours on the      counter. Punch down, place in a lightly      oiled container, and refrigerate 24–48 hours more. 48 hours is good. 72      hours is killer. Remove from fridge 1½–2 hours      before using. Divide, relax, stretch, and bake.
