People incorrectly believe that cleaning cast iron with soap will remove the seasoning. Yes, soap is fantastic at washing off oil and that’s why I recommend cleaning (all cookware) with soap- it will remove old cooking oil that we no longer want on there! The seasoning on cast iron consists of polymerized oil. It started as oil but went through a chemical process called polymerization- fatty acids break down from the heat and carbon chains start cross linking and create chemical bonds called polymers that we refer to as ‘seasoning.’ The seasoning is much closer to a plastic (solid) than it was the liquid oil is started as. Soap WILL NOT remove the seasoning because it is no longer oil. We create seasoning naturally from cooking- when the pan gets hot enough, some (not all) of the oil will polymerize and create a layer of seasoning. We can also season cast iron in the oven (as mentioned in this video) or on the stovetop (without cooking food). Soap👏🏻is👏🏻safe👏🏻for👏🏻cast👏🏻iron
