Put it back into the container with a little bit of cold water and shake it! It helps it emulsify again.

with alfredo, i heat in the microwave and add the smallest splash of water then shake it super crazy (with the lid) and it helps bring it back to life!

I reheat cream based sauce with a few splashes of milk over a gentle simmer (if u crank up the heat too much, the cheese and fat from the cream all split and get oily!)

When I reheat, cream sauce, meals, add a little water or chicken stock to it, and it will be much creamier and it will taste much better. Everything looks so yummy.😁

It sounds crazy but when reheating cream based meals add just a little water and stir well while over the heat.. there’s a technical reason this works but I don’t remember what it’s called I just know it works!

So if I have a cream based sauce I heat it back up on the stove and I feel like that helps with the sauce becoming separated and very oily. I used to just microwave and I never would eat Alfredo as leftovers

No offense, but why would you pan sear something with cream sauce to reheat it? Put it in the microwave so the sauce can rehydrate not reduce down

I’ve found the cream based sauces heat up the best when you add some more milk or butter back into it, and use low heat. Helps keep the emulsion going. Such a bummer when you end up with a bunch of oil!
