Mix with ~4 tbsp Greek yogurt, paprika, garam masala, turmeric, salt, 1 tsp ginger paste, ½ lemon juice + a drizzle of avocado oil. Marinate 30 min+. Cook in 2–3 tbsp butter until chicken reaches 165°F. Remove. Sauce: In the same pan, add a little avocado oil + 1 tbsp butter. Sauté ½ diced red onion until translucent. Add 2 minced garlic cloves , 1 tsp ginger paste , 1/2 tsp each paprika, garam masala, turmeric & salt. Add 1–2 tbsp tomato paste, then 250g blended tomatoes. Stir, add a splash of heavy cream, and simmer until thickened. Add chicken back in and simmer 5 min. Tacos: Mix avocado oil spray + paprika + garam masala on a parchment-lined sheet. Coat one side of 8–10 small flour tortillas, seasoned side down. Fill with butter chicken + shredded mozzarella, fold, and spray tops with oil. Cover with foil & bake at 400°F for 10–15 min.
