Mold is a part of a lot of steak dry aging processes but it doesn't usually look like hair and they usually don't draw attention to it, for the same reason they call it "Bleu cheese" and not "mold cheese"

our ancestors buried meat under ground to cook it in a fermentation way. it is actually how we developed good gut bacteria by eating rotten / fermented /moldy foods. it's gross but we should still be doing this for health
