Add onion + red & green bell peppers. Saute until soft, ab 3-4 min.  • Add garlic and oregano until fragrant, ab 30 seconds and then add the beef & seasonings. Break apart the beef. Cook until it’s no longer pink and almost cooked through, ab 5-7 minutes. Stir in the tomato paste. • Add the tomatoes (no need to drain), uncooked rice, and beef broth. Bring to a boil. Reduce to low heat, cover, and simmer for 15-18 minutes until rice is cooked. Turn off the heat, give it a stir, and add extra broth if needed. Stir in the cheese. • Hint: If you want to use minute rice, you only need to let the mixture simmer for 10-15 minutes and add the minute rice in the last 1-2 minutes. If using brown rice, cook the rice separately and add it in the same way as minute rice. STORAGE • Refrigerator - store in an airtight container up to 3-4 days. • Freezer - store in a freezer-safe container up to 2 months.
