Orecchiette 200g semolina (rimacinata) 100g room temperature water Pinch of salt (2 parts flour to 1 part water. Scale as needed.) 1. Make a well in the flour and slowly add the water and salt, mixing until a dough forms. 2. Knead for 8–10 minutes, cover and rest for 30 minutes. 3. Roll into thin ropes and cut into small pieces. 4.
