Ingredients For the Herb-Crusted Lamb 1 rack of lamb (8 ribs), cleaned and frenched 2 tbsp Dijon mustard ½ cup panko breadcrumbs 2 tbsp fresh parsley, finely minced 1 tbsp fresh rosemary, finely minced 1 tbsp fresh thyme, finely minced 2 cloves garlic, minced 2 tbsp olive oil Salt and freshly ground black pepper, to taste For the Red Wine Reduction / Pan Sauce 1 tbsp butter 1 small shallot, finely diced ½ cup dry red wine (Cabernet Sauvignon or Pinot Noir) 1 cup beef or veal stock (or demiglace) 1 sprig fresh thyme 1 tbsp cold butter (for finishing) For the Grilled Vegetables & Sides 1 small zucchini, sliced into ribbons or bias rounds 1 yellow squash, sliced lengthways or sliced on bias 1 red or orange bell pepper, quartered 1 cup baby spinach or watercress greens (for garnish) 1 cup butternut squash or sweet potato puree (optional base) Olive oil, salt, and pepper for grilling Instructions 1. Prepare & Roast the Lamb 1. Preheat Oven: Heat your oven to 400°F (200°C). 2. Season & Sear: Pat the rack of lamb dry. Season generously with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over high heat and sear the lamb for 2–3 minutes per side until browned. Remove from heat and set aside on a plate. 3. Prepare Crust: In a small bowl, mix the breadcrumbs, parsley, rosemary, thyme, garlic, and 1 tablespoon of olive oil until evenly combined. 4. Coat & Roast: Brush the fat-side of the lamb thoroughly with Dijon mustard. Press the herb-crumb mixture firmly onto the mustard coat. 5. Roast: Place the lamb in a roasting pan or skillet and roast in the oven for 15–20 minutes (for medium-rare, aiming for an internal temperature of 130°F / 54°C). Remove and let rest for 10 minutes before slicing between the bones into individual chops. 2. Make the Red Wine Reduction 1. Melt 1 tablespoon of butter in a saucepan over medium heat. Add the shallot and cook until translucent (about 2 minutes). 2. Pour in the red wine and sprig of thyme. Bring to a simmer and reduce the wine by half. 3. Pour in the beef stock/demiglace and simmer until the sauce thickens and coats the back of a spoon (about 8–10 minutes). 4. Remove from heat, discard the thyme sprig, and swirl in 1 tablespoon of cold butter for a rich, glossy finish. Season with salt to taste. 3. Grill the Vegetables 1. Heat a grill pan or outdoor grill to high heat. 2. Toss zucchini, yellow squash, and peppers with olive oil, salt, and pepper. 3. Grill for 3–4 minutes per side until attractive grill marks appear and the vegetables are tender-crisp. 4. Briefly wilt the spinach/greens in a pan with a drop of olive oil and salt. Plating Technique (Restaurant Style) 1. Sauce Mirror: Spoon a smooth pool of the warm red wine reduction onto the front-left portion of the plate. 2. Vegetable Bed: Layer the squash puree or grilled vegetables nicely on the back-right side of the plate. Top with wilted greens or watercress. 3. Arrange Lamb: Stand 2–3 double or single sliced lamb chops shingled together next to the vegetables, with the frenched bones resting upright. 4. Garnish: Drizzle extra virgin olive oil around the perimeter and top with fresh herbs or extra toasted crumb mixture.#recipes #DinnerIdeas #dinner
