I think I've tried just about every turkey breakfast sausage on the market, but there is nothing like making your own. This recipe is flavorful, juicy and incredibly easy to customize. And the best part? You can make it with whatever ground meat you prefer: turkey, chicken, pork or beef. If you're using lean ground turkey or chicken, the little bit of water and olive oil in the seasoning mixture helps keep the sausage moist and also helps distribute the seasoning evenly throughout the meat. It's a trick I picked up from watching professional sausage makers! I love making a batch ahead of time and keeping it in the freezer for quick breakfasts, especially on busy mornings. Here's the recipe: HOMEMADE BREAKFAST SAUSAGE Seasoning Blend: 1 1/4 tsp salt 3/4 tsp black pepper 1 tsp garlic powder 1 tsp onion powder 1 1/2 tsp ground sage or 1 Tbs fresh sage, chopped fine 3/4 tsp brown sugar 3/4 tsp smoked paprika 1/4-1/2 tsp red pepper flakes 1 1/2 Tbs water 2 tsp olive oil, if using ground turkey or chicken 1 lb ground meat of choice: turkey, chicken, pork or beef Add all the seasonings, water and olive oil, if using, to a small bowl and mix well. Place the ground meat in a medium mixing bowl and pour over the seasoning mixture. Mix together with your hands until well incorporated. Shape into patties with damp hands. Cook immediately, or refrigerate for up to 24 hours or freeze for up to 2 months. You can also fully cook the sausage, cool it completely and freeze in an airtight container for up to 3 months. I love serving these with eggs, biscuits, pancakes, on a breakfast sandwich or alongside a bowl of fruit for an easy breakfast.
