One of the best, most moist meatballs I’ve ever made — truly restaurant-worthy. Inspired by Fabio Viviani 🍝 Soft, juicy, and packed with flavor… this is your sign to stop making dry meatballs. My twist? Extra ricotta + fresh parsley… and if you really want to elevate it, add finely minced mushrooms for insane flavor + texture. Ground turkey is a great substitute as well. Review: 9.5/10 — insanely soft, saucy Ingredients: •	1 lb ground beef or ground turkey •	5–6 oz whole milk ricotta (I added extra for moisture) •	1 cup grated Parmigiano Reggiano •	1 cup panko breadcrumbs •	1 egg •	2 garlic cloves, minced •	2 shallots, minced •	1 tsp olive oil •	Salt + pepper •	2–3 tbsp fresh parsley, finely chopped •	(Optional) ½ cup finely minced mushrooms •	2 cups tomato sauce •	Extra-virgin olive oil (for finishing) ⸻ Directions: 1.	In a bowl, mix beef, ricotta, Parm, panko, egg, garlic, shallots, parsley, salt + pepper until fully combined (don’t overmix). 2.	Lightly oil your hands and roll into meatballs slightly larger than golf balls. 3.	Heat tomato sauce over medium. Add meatballs + a splash of water (just enough to loosen the sauce). 4.	Simmer 10 mins, flip, add another splash of water, and simmer another 10 mins—spooning sauce over the top as they cook. 5.	Remove from heat and let rest 5 mins. 6.	Finish with parsley, extra Parm, salt + pepper, and a drizzle of olive oil. And if you really want to take this to another level…make it a sandwich. Warm bread, melty mozzarella, juicy meatballs, and a dollop of ricotta on top = unreal Olive oil from @smashkitchen Pan: @STAUB USA Top: @csb Drink: @Aperol Spritz All ingredients bought on @FreshDirect Enjoy!
