I've always been taught to fry them without butter at the start to release the liquid and only once the liquid has evaporated to add in the butter. Is this method better? I'm not a professional cook btw

Fish sauce and mushroom powder. Chicken powder. So many Asian ingredients that prioritize umami are so totally slept on because they sound so for lack of a better term “foreign” to what we(in the west) know.
