Taco Tuesday gets a Midwest makeover! 🌮 It’s “What to Make When You Don’t Know What to Make” Week, 🙌 and this Tater Tot Taco Casserole definitely belongs on the list. Think Minnesota hotdish meets taco night — seasoned beef, black beans, corn, enchilada sauce, plenty of cheese and crispy tater tots on top. Tater Tot Taco Casserole Ingredients: 1 lb ground beef 1 small yellow onion, diced 2 cloves garlic, minced 2 tablespoons taco seasoning (or 1 packet) 1 (15 oz) can corn kernels, drained 1 (15 oz) can black beans, rinsed and drained 1/2 cup green onions, sliced 1 (7 oz) can diced green chilies 1 (19 oz) can enchilada sauce 3 cups shredded Mexican blend cheese 1 (32 oz) package frozen tater tots For serving: sour cream, sliced black olives, sliced green onion and chopped tomatoes Directions: 1. Heat oven to 375°F and grease a 9x13-inch baking dish. Optional: pre-bake the tater tots for 10 minutes for extra crispiness. 2. Cook ground beef over medium heat for about 3 minutes. Add onion and garlic and continue cooking until onion softens and beef is fully cooked. 3. Drain if needed. Stir in taco seasoning, corn, black beans, green onions and green chilies. 4. Stir in enchilada sauce and 2 cups of the cheese. Transfer to the baking dish. 5. Arrange frozen tater tots over the top. 6. Bake uncovered for 40 minutes. Sprinkle with remaining cheese and bake about 5 minutes more, until melted. 7. Let rest 5 minutes and serve with sour cream, black olives, green onions and tomatoes, if desired.
