I've been in the kitchen of the lovely woman I used to buy my eggs, apple butter, catfish, veggies, etc from and you could eat off her floor it's so clean! So many States have become food freedom States and NC SHOULD be moving in that direction too!

I agree that “government inspected” doesn’t mean “incapable of making you sick.” But that doesn’t mean inspections serve no purpose. I’m all for cutting unnecessary rules on low-risk foods and small producers. Where I hesitate is making inspection completely optional for acidified, refrigerated, or otherwise higher-risk foods. The real question isn’t whether inspected food can still cause illness—it’s whether the rules reduce the risk. If they do, that matters.

House Bill 833, the FRESH Act, would direct the NC Department of Agriculture and Consumer Services to expand its Home Processor Program to let home-based producers make and sell refrigerated or frozen foods, plus cream-filled bakery items like cheesecake — categories currently off-limits to home processors, who are typically restricted to shelf-stable goods. The bill keeps existing food-safety laws and inspections in place, but lets the Department implement the change through temporary rules ahead of permanent ones. It’s still sitting in committee (Agriculture and Environment), so nothing is in effect yet. The main risk is that perishables carry a much higher bacterial-growth danger than shelf-stable goods, while home kitchens lack the temperature monitoring, HACCP plans, and inspection capacity that commercial facilities have — and scaling oversight to many scattered home kitchens strains the Department without added funding. The bill could be strengthened with clearer safety standards finalized before rules take effect, training requirements for handling perishables, dedicated inspection funding, batch labeling and sales-record requirements for traceability in case of a recall, a phased or capped rollout limiting which products or sales channels qualify, and a sunset clause requiring a safety review before the expansion becomes permanent.

It appears HB833 didn’t make the crossover deadline, so it’s dead. It wasn’t that the Governor failed to bring it to a vote, the House never took it up. So supporting it now is a moot point. But, I could get your N.C. Senator out to meet with you and talk through a solution.
