The butter will bubble and make a noticeable crackling sound as its water cooks off. This is normal. 3. Stir and scrape the bottom. Once it is fully melted and foamy, stir frequently—especially across the bottom and edges—so the milk solids do not stick and burn. 4. Watch for the finish. The bubbling will become quieter, the foam may lessen, and small brown specks will appear on the bottom. The liquid will become golden to amber and smell distinctly nutty, like toasted hazelnuts or toffee. 5. *Immediately pour it into a heatproof bowl, including the brown flecks. The hot pan will keep cooking the butter, so transferring it stops it from progressing into burnt butter. Set aside.* FOR THE APPLES: 5-6 medium apples, thinly sliced 1/3 c brown sugar 2 tbsp flour 1 tsp cinnamon 1/4 tsp salt To a large bowl, add the apples, brown sugar, flour, cinnamon, and salt; thoroughly mix together and set aside. FOR THE TOPPING: 3/4 c flour 1/2 c old fashioned oats 1/2 c brown sugar 1/4 c walnuts, finely chopped 1/4 tsp salt 1/2 c (1 stick) brown butter To a medium bowl, add the flour, oats, brown sugar, walnuts, salt, and brown butter (reserve two tbsps of the butter to drizzle over topping before putting in oven); mix together until crumbly; Add the apple mixture to an 8x8, 9x9, or 9x5 pan; top with crumble mixture; drizzle with remaining brown butter; bake 45-50 minutes or until desired firmness of apples.
