Kuwaiti Lamb Majboos Ingredients: * 5 tbsp oil * 600 g boneless lamb, large pieces * 1 cup rice, soaked 3 hours * 2½ cups warm water * 1 tbsp whole black pepper * 1 tbsp cumin + 1 tbsp cumin powder * 1 tbsp coriander powder * 3 star anise * 2 cinnamon sticks * 2 bay leaves * 2 dried lemons * 3 green + 2 black cardamoms * 1 tbsp crushed ginger-garlic * 1 tbsp chopped onion * 1 tbsp salt + 1 tbsp black pepper * Pinch saffron + 2 tbsp milk * 1 tbsp tomato paste * 1 tbsp chilli flakes * Pinch oregano * White raisins Method 1. Sauté whole spices, ginger-garlic and onion in oil. Add lamb, water, salt and pepper. Pressure-cook on very low heat for 1 hr 15 min. 2. Remove lamb and strain the yakhni. Reserve 3 tbsp. 3. Cook soaked rice in the yakhni with cumin, coriander and saffron milk. Cover and cook on very low heat for 3–4 min, then switch off. 4. Mix reserved yakhni with tomato paste, chilli flakes, oil and oregano. Brush over lamb and pan-fry until crispy. 5. Fry raisins separately.
