1.He probably can hear better than most humans. 2.He wasn’t trying to choke Ultron, simply restrain him from flying and shooting him or tried ripping his head off like other Ultron bots, it was even working against Ultron. 3.Jumping out the plane would just put it back to auto pilot so Steve had to control it.
