📌 SLOW COOKER BEEF MEATBALLS & ONION GRAVY
🍽️SERVES 4
🥩 FOR THE MEATBALLS
• 500g 5% beef mince
• 1 small egg
• 1 slice wholemeal bread, blended into breadcrumbs
• 2 garlic cloves, finely minced
• 1 tbsp dried parsley
• ½ tsp dried oregano
• ½ tsp smoked paprika
• Pinch of ground black pepper
• Low-calorie cooking oil spray
🧅 FOR THE ONION GRAVY
• 1 large onion, thinly sliced
• 500ml beef stock, made with 1 rich beef stock pot + 1 beef OXO, crumbled
• 2 tsp Worcestershire sauce
• 1 tbsp tomato purée
• ⅓ tsp garlic powder
• 1 tsp onion granules
• 1½ tsp dried parsley
• 1 tsp wholegrain mustard
• ½ tsp dried thyme
• Pinch of ground black pepper
• 1 tbsp cornflour mixed with 2 tbsp cold water
🥔 FOR THE SIDES
• 800g potatoes, peeled
• 1 tsp buttery light spread
• 40ml semi skimmed milk
• 240g green beans
👩🍳 METHOD
1️⃣ Add the beef mince, egg, breadcrumbs, garlic, herbs and spices to a bowl. Mix well, then shape into 20 meatballs.
2️⃣ Spray a frying pan with low calorie cooking spray and brown the meatballs on all sides. Transfer them to the slow cooker along with the sliced onion.
3️⃣ Whisk together the beef stock, Worcestershire sauce, tomato purée, garlic powder, onion granules, parsley, mustard, thyme and black pepper. Pour over the meatballs.
4️⃣ Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
5️⃣ About 30 minutes before serving, mix the cornflour with cold water to make a slurry. Stir into the slow cooker and allow the gravy to thicken.
6️⃣ Meanwhile, boil the potatoes until tender. Drain and mash with the buttery spread and milk.
7️⃣ Cook the green beans until just tender.
8️⃣ Serve the creamy mash topped with the meatballs and plenty of onion gravy, with green beans on the side. Enjoy!
