This week’s crockpot recipe is lasagna soup! 🍲🤎 Truly a family favorite and one of those easy dinners everyone goes back for. I’m officially ready for cozy soup season! 🍂 🍅 Crockpot Lasagna Soup Ingredients * 1 lb ground beef * 1 lb Italian sausage * 24 oz marinara sauce * 4 cups chicken broth * 1 tsp Italian seasoning * 1 tsp onion powder * 1 tsp garlic powder * Salt & black pepper, to taste * ½ yellow onion, diced * 8 lasagna sheets, broken into pieces * ½ cup heavy whipping cream * ½ cup ricotta cheese, optional, for topping * ½ cup shredded mozzarella cheese, for topping Instructions 1. Brown the meat: In a skillet over medium-high heat, brown the ground beef and Italian sausage until fully cooked. Drain any excess grease. 2. Add to the crockpot: Add the cooked meat to your crockpot along with the diced onion, marinara sauce, chicken broth, Italian seasoning, onion powder, garlic powder, salt, and pepper. Stir everything together. 3. Slow cook: Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, allowing all those flavors to come together. 4. Add the noodles & cream: About 30–45 minutes before serving, break the lasagna sheets into smaller pieces and stir them into the soup. Add ½ cup heavy whipping cream and stir well. 5. Finish cooking: Cover and continue cooking until the lasagna noodles are tender, usually about 30–45 minutes. Give it a stir once or twice if needed so the noodles don’t stick together. 6. Serve: Ladle the lasagna soup into bowls and top with shredded mozzarella and a spoonful of ricotta cheese, if desired. The ricotta is completely optional but makes it extra creamy and gives it that classic lasagna flavor. 🧀 #crockpot #soupseason #fall #fallrecipes #autumn
