@kyfitjourney: Creamy tomato pasta ✨🍝 a 10-minute meal that hits EVERY time 🤌🏽 Full Recipe👇🏽 Ingredients 200g pasta, dry 250g cherry tomatoes, halved ½ red onion, finely diced 2 garlic cloves, minced 1 tbsp olive oil 1 tbsp tomato purée ½ tsp smoked paprika ½ tsp dried oregano Salt & black pepper, to taste 2 ladles pasta water 1 tbsp cream cheese 30g grated cheese Squeeze of fresh lemon juice Fresh parsley, chopped, to serve Method 1. Cook the pasta according to the packet instructions until al dente. Reserve some pasta water before draining. 2. Heat the olive oil in a large pan over medium heat. Add the red onion and cherry tomatoes and sauté for 4–5 minutes until softened. 3. Add the garlic, smoked paprika, dried oregano, salt and black pepper. Cook for another minute. 4. Stir in the tomato purée, then add 2 ladles of pasta water. Mix well and let the sauce simmer for 2–3 minutes. 5. Add a squeeze of fresh lemon juice, then add the cooked pasta and toss everything together. 6. Stir through the cream cheese until smooth and creamy. 7.
