Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper. . Make the apple mixture: Melt the butter in a skillet over medium heat. Add the diced apples, brown sugar, cinnamon and nutmeg. Cook for 5–7 minutes, until the apples soften slightly. . Stir in the vanilla and cornstarch. Cook for another minute, then remove from the heat and allow it to cool slightly. . Make the batter: Beat the softened butter and granulated sugar for 2–3 minutes, until light and fluffy. . Add the eggs one at a time, then mix in the vanilla, sour cream and milk. . In a separate bowl, whisk together the flour, baking powder and salt.
