Cook the vegetables: In a wok or nonstick pan over medium heat, cook the zucchini, carrots, and mushrooms separately with a little oil and a pinch of salt until softened and fully cooked.  - Zucchini: about 2 minutes (medium heat) - Carrots: 4-5 minutes (medium-low heat) - Mushrooms: 2-3 minutes, until tender (medium heat, add more oil if needed) 2. Blanch and season greens: Bring a pot of water to a boil. Blanch the spinach for 30–60 seconds until wilted, then remove and set aside. Blanch the bean sprouts for 2–3 minutes until slightly softened.Drain both well. Squeeze excess water from the spinach, then season each with a pinch of salt and about 1 tsp sesame oil. 3. Assemble the bibimbap: Add ¾–1 cup of cooked rice to a bowl. Arrange the cooked vegetables on top, along with the Korean fried chicken.
