I love topping them with dairy-free yogurt, fruit, and a generous drizzle of maple syrup 🤍 ✨ Ingredients: for 8 pancakes •80g flour •1/2tsp cinnamon ( or 1 if you love cinnamon like me) •140ml milk ( any vegan milk) •A bit less than 1tsp baking powder •1tsp brown sugar ( or coconut) •Pinch of salt •2 large apples •1/4 tsp ground cinnamon (optional) •Coconut oil or vegetable oil, for cooking (about 1/2 tbsp or 7 g) ✨ Method: -Core the apple and cut it into ¼-inch thick slices to form rings. Sprinkle the slices with cinnamon and brown sugar. I use remaining apple cut in squares sauted with maple syrup to place on top of pancakes later. -Mix flour with cinnamon, salt, baking powder and sugar. Add warm milk and mix. Let rest for few min -Dip each apple slice into the pancake batter and fry on the non stick pan for 4min each side. -Use any desired toppings. I like to use dairy free yogurt, fruits and maple syrup!
