Creamy pumpkin vodka sauce + crispy Italian sausage + Parmesan + crispy sage = fall comfort food. 🍂 And no—it doesn’t taste like pumpkin pie. 😂 🎃 PUMPKIN VODKA RIGATONI WITH CRISPY SAUSAGE Makes 4–6 | ~35 min 🍝 INGREDIENTS • 1 lb rigatoni • 1 lb Italian sausage • 3 cloves garlic, minced • 2 tbsp tomato paste • ½ cup pumpkin purée • ¼ cup vodka • 1 cup heavy cream • ½ cup grated Parmesan • ½–1 tsp red pepper flakes • Salt + black pepper • ½–1 cup reserved pasta water 🌿 CRISPY SAGE • 2 tbsp butter • 8–10 sage leaves 🍂 DIRECTIONS 1️⃣ Brown sausage in a large skillet until crispy. Remove ⅓ for topping. 2️⃣ Add garlic + red pepper flakes. Cook 30 sec. Add tomato paste and cook 2–3 min. Stir in pumpkin and cook another 1–2 min. 3️⃣ Add vodka and simmer 2 min. Reduce heat, stir in heavy cream and season with salt + pepper. 4️⃣ Cook rigatoni just shy of al dente, reserving pasta water. Add pasta to sauce with ½ cup pasta water and toss until glossy. Remove from heat and stir in Parmesan. 5️⃣ Melt butter in a small skillet and fry sage for 30–60 sec until crispy.
