I come from the province in Canada (Saskatchewan) that feeds 90% of the world with our pulses. You can use any lentil for this recipe if you don't have red. I personally would add a few cardamom pods and remove after simmering. 🙏

I make something like this all the time. I’ll also fine dice or grate some carrot, I think carrot and ginger go so well together and cook the veggies down with some chickpeas and then blend them with the coconut milk to make it smooth and creamy then put it back in the pan with the lentils

It's good to slice some birdseye chillies into it for extra heat. If your budget stretches to fresh spinach, then tear about 80g per portion in and cook down for extra taste and micro nutrients. I also like it with a vegetable stock cube crumbled in
