@gregbaxtrom: You don’t need to buy the expensive cuts to make a great lamb dinner. Lamb shoulder is cheaper, more forgiving, and honestly, really good. It’s thin, gets a great sear, and is a lot easier to get to a perfect medium rare. I serve it with one-pot couscous and vegetables.
