All my food goes in the trash, not in the sink. I’ve never given drains much thought either aside from the space underneath the cabinet. I don’t know if that’s the only pro or not.

Do it: a single sink sucks. That sucks badly. The only way you have a side drain is if you have one big sink but having one big sink in the kitchen is ridiculous. You need to have two sinks. I don't know who the hell wants one big sink.

I didn’t even know that side drain was a thing. I am tempted to try now given the space on one side.

A middle drain would be better if you want drawers under it as you can build the drawer in a “U” shape around the plumbing. To the side it might get in the way of the runners
