Save the RECIPE below. 👇 1 lb. ground beef 1 can (15 oz.) black beans, drained and rinsed 1 can (15 oz.) corn, drained 1 1/2 cups salsa 1 packet Simply Organic® Mild Taco Seasoning Mix 9 (6-inch) flour tortillas 2 cups Mexican-style shredded cheese, divided Optional: chopped cilantro, for serving Preheat oven to 350 degrees. In a large skillet over medium-high heat, brown ground beef, breaking it up with a wooden spoon until no pink remains. Add black beans, corn, salsa, and taco seasoning and stir well, continuing to cook until heated through. In an oval or rectangular casserole dish, spread about 1/2 cup beef mixture in the bottom. Top with 3 tortillas (cut one in half if needed for better fit), then half of the remaining beef mixture. Top with 1/2 cup shredded cheese, 3 more tortillas, the remaining beef mixture, 1/2 cup shredded cheese, 3 more tortillas, and finally, 1 cup shredded cheese. Cover tightly with foil and bake for 20 minutes, until cheese is melted and dish is heated through. Remove foil and bake for 5 minutes more. Serve warm garnished with cilantro (optional).
