Fire-Roasted Peach, Burrata & Bacon Flatbread | Cooking Over Coals on the Suwannee River Cooking over an open fire in the woods along the beautiful Suwannee River—today’s recipe is a sweet, savory Fire-Roasted Peach, Burrata & Bacon Flatbread. 🍑🔥 Caramelized peaches and dates cook in a cast-iron skillet over hot coals, then get layered over charred flatbread with creamy burrata, crispy bacon, fresh basil, spicy honey, and cracked black pepper. It’s simple campfire cooking with big flavor—and perfect for a relaxed evening by the river. Ingredients - 2 small naan, pita breads, or flatbreads - 1 ripe but firm peach, halved and pitted - ½ ball burrata (about 2 oz / 55 g), or 8 mozzarella pearls - 3 slices bacon - 1 tbsp brown cane sugar - 6 pitted dates, sliced - 1 tsp olive oil, or basil-and-garlic-infused olive oil - 4–6 fresh basil leaves, torn - 1 tsp hot honey - Flaky sea salt, optional (omit if bacon is salty) - Freshly cracked black pepper - Chopped pistachios, optional Directions 1. Cook the bacon: Cook bacon in a cast-iron skillet over the fire, or in a grill-safe pan, until crisp. Transfer to a paper towel, then crumble once slightly cooled. 2. Fire-roast the peaches and dates: Slice the peach into small wedges. Add the peaches to the cast-iron skillet over medium-hot coals or a grill grate. Cook for about 3 minutes, then add the brown sugar and sliced dates. Continue cooking until caramelized and lightly charred. 3. Toast the flatbread: Warm the naan or flatbread over the fire for 1–2 minutes per side, until lightly crisp with a few charred blisters. 4. Build the flatbread: Layer the warm flatbread with the caramelized peaches. Tear the burrata or mozzarella over the top, then add the dates. 5. Finish and serve: Top with crumbled bacon, fresh basil, black pepper, and a small pinch of flaky sea salt if needed. Add pistachios, if using, and finish with a drizzle of hot honey.
