Starting my sunday soup series with this delicious tomato pepper soup and grilled cheese! This soup is made right on the stove top, in one pot. It’s the perfect soup to start of the soup season.  stovetop tomato pepper soup + grilled cheese ingredients for the soup: • 3 lbs garden tomatoes, roughly chopped • 2 medium red bell peppers, chopped • 2 large shallots, chopped • 6–8 garlic cloves, minced • 1 tbsp olive oil • 1 tbsp butter • 1½ tbsp tomato paste • 5–6 sprigs fresh thyme • 10–15 fresh basil leaves • 1 tsp salt, plus more to taste • 1 tsp black pepper, plus more to taste • 1 tsp sugar • 1 cup bone broth, chicken broth, or vegetable broth • ½ cup heavy cream, plus more for serving for the grilled cheese: • fresh bread, sliced • butter, softened • sliced basil and garlic Monterey cheese, about 3 slices per sandwich, or your favorite melting cheese directions 1. Heat the olive oil and butter in a large pot over medium heat. Add the shallots and red bell peppers. Sauté for 8–10 minutes, stirring occasionally, until softened and the peppers have a little char. 2. Add the tomato paste and cook for about 2 minutes. Stir in the garlic and cook for another minute, just until fragrant. 3. Add the roughly chopped tomatoes, fresh thyme, basil, salt, black pepper, and sugar. Stir and let it simmer for about 15 minutes, until the tomatoes have softened and released their juices. 4. Pour in the broth and simmer for another 5 minutes. 5. Remove the thyme stems, then use an immersion blender to blend the soup until smooth. If using a regular blender, carefully blend the hot soup in batches and return it to the pot. 6. Stir in the heavy cream and taste, adding additional salt and black pepper if needed.  7. For the grilled cheese, butter the outside of each slice of bread and add the cheese between the slices. Cook in a skillet over medium-low heat until the bread is golden and crispy and the cheese is melted. 8.
