I LOVE my mom’s recipe for piped sablés! Now we’re making them almost too cute to eat! These little buttery piped sablé bears are hugging tiny pumpkins, and I am OBSESSED. The best part? No cookie cutters needed. One dough, one piping bag, and you can build the whole little guy piece by piece. And because we chill them before baking, those gorgeous piped ridges stay nice and defined. Save this one because you can turn it into just about anything!!! INGREDIENTS 1 cup (226 g) unsalted butter, very soft but not melted ⅔ cup (80 g) powdered sugar 1 large egg white, room temperature 2 tsp vanilla extract ¼ tsp salt 2 cups (240 g) all-purpose flour ¼ cup (30 g) cornstarch Gel food coloring: orange, green & brown Melted chocolate, royal icing, or small candies for the eyes/nose STEP 1 — MAKE THE SABLÉ DOUGH Beat the softened butter and powdered sugar until smooth and creamy. You don’t need to whip tons of air into it. Add the egg white, vanilla and salt. Mix until combined. Add the flour and cornstarch and mix just until a soft dough forms. 👉 The dough should be soft enough to pipe without a wrestling match but firm enough that a piped ridge holds its shape. STEP 2 — COLOR THE PUMPKIN DOUGH Remove a few small portions of dough. 🎃 Tint one portion orange for the pumpkin. 🌿 Tint a tiny portion green for the leaf. 🤎 Tint another tiny portion brown for the stem. Use gel food coloring so you don’t add too much extra liquid to the dough. Leave the majority of the dough plain for your bear. STEP 3 — PREP Transfer the plain dough to a piping bag fitted with a large open-star tip, such as a Wilton 1M or 2D. If the dough feels too firm to pipe, let the filled bag sit at room temperature for a few minutes rather than adding liquid. Line a baking sheet with parchment paper. STEP 4 — BUILD YOUR BEAR 🧸 Pipe everything directly onto the parchment: 1. Pipe two small shells/rosettes for the ears. 2. Pipe a large spiral between them to create the head. 3. Pipe a small star/rosette near the bottom center of the head for the muzzle. 4. Pipe the body directly underneath. 5. Add two arms and two feet. 6. Pipe a small orange pumpkin between the arms. 7. Finish with a tiny brown stem and green leaf. DON’T ADD THE FACE YET! 😂 Our little pre-baked bears remain adorably soulless until Step 7. STEP 5 — CHILL Place the entire tray of finished, unbaked bears in the refrigerator for 20–30 minutes. Don’t skip this part! Chilling firms the butter back up and helps those beautiful piping ridges survive the oven instead of melting into bear-shaped blobs. STEP 6 — BAKE Bake at 325°F (163°C) for approximately 16–20 minutes. Because these cookies are thick, we want the lower temperature to give the centers time to bake. They’re ready when they’re set and the very outer edges are just beginning to turn lightly golden. Let them cool completely on the baking sheet before moving or decorating them. STEP 7 — GIVE THAT BEAR A FACE 🥹 Once completely cool, add two tiny eyes and a nose using melted chocolate, royal icing or small candies.
