MUSSELS ON THE BEACH? YES PLEASE It’s another heatwave, so what better excuse than to whip up a simple moules mariniere with our Wild Caught Fish Bone Broth. Our team recreated this one after a shoot day in Cornwall with the help of some of the best Cornish produce - ready in under 25 mins, this pot is a crowd-pleaser, whether you eat it on the beach or on your balcony. RECIPE: 750g sustainably caught mussels 1 pouch of our Wild Caught Fish Bone Broth 1 garlic clove, finely chopped 2 shallots, finely chopped 25g butter 100ml dry white wine 120ml double cream handful of parsley leaves, roughly chopped crusty bread, to serve @Cornish Sea Salt Co flakey sea salt Method 1. Prepare your mussels by washing them under plenty of cold water, discarding any that won’t close when tightly squeezed. Make sure your mussels are debearded. 2. In a very large pan (ideally big enough to take all the mussels and only be half full), gently fry the garlic and shallots in the butter. Cook over a low heat until the shallots are soft and translucent. Add a splash of white wine and a pouch of our Wild Caught Fish Bone Broth. 3. Add the mussels. Turn up the heat, then cover with a lid and steam for 3-4 minutes. Give the pan a good shake every now and then. The mussels should open, discard any that stay closed. Add the cream and chopped parsley and remove from the heat. 4. Spoon into three large warmed bowls and serve with lots of crusty bread.
