Mutanjan 🌈(A beautiful festive rice that tastes as good as it looks😍) Ingredients * 1 glass rice * A pinch of cardamom powder * ¼ tbsp salt * Juice of ½ lemon * 3 tbsp oil * 60g tbsp butter * 1 cup sugar * Assorted dry fruits, as desired — almonds, pumpkin seeds & raisins * ½ cup milk * 1 tbsp rose water * ¼ tbsp cardamom powder * ⁠food colours Method: 1. Soak the rice for 3 hours. 2. Bring water to a boil. Add cardamom powder, salt and lemon juice. 3. Add the soaked rice and cook until 90% done. Drain and set aside. 4. In another pan, heat 3 tbsp oil + 60 g butter. 5. Add 1 cup sugar and mix well. 6. Add the almonds, pumpkin seeds and raisins. Sauté until lightly toasted. 7. Add ½ cup milk, rose water and cardamom powder. Mix and let it come to a boil. 8. Gently add the cooked white rice and mix carefully. 9. Add the green, red and yellow coloured rice in layers/pockets over the white rice. 10. Cover and dum cook for 15 minutes on low heat. 11.
